Gluten-Free Thai Peanut Shrimp Stir Fry

Neil and I really love Thai food and we really love stir fry, so last night due to a last minute change up on dinner we mixed the two. We had a nasty round of thunderstorms (+ hail) that prevented us from grilling outside so we turned our “shrimp Skewer” night into Shrimp Stir Fry night with Thai peanut sauce and Basmati rice. By the way, Basmati rice is the bomb.com! I don’t know what it is, but it tastes better than normal white rice. It could all be in my head too.

INGREDIENTS:

3 colored peppers (we used yellow, red + orange) 1 bunch of green onions
1 container of sliced mushrooms
1 cup chopped broccoli
1 cup shredded carrots (more or less depending on your preference)
1 bag of jumbo, de-veined shrimp
16 oz bag of Basmati rice (I used Village Harvest brand)
San-J Gluten-free Thai Peanut Spicy Marinade (you can also make homemade)
1/4 cup chopped peanuts (optional)
Real butter
Salt + Pepper

1. Cook the basmati rice according to instructions on the package. This rice cooks a fuzz different than normal rice so read them carefully. It also takes roughly 40 minutes to cook, so I started this first. If you want to use regular white rice, knock yourself out.

2. While the rice is cooking, saute shrimp with real butter in a medium skillet. I bought jumbo, cooked, de-veined shrimp so all I had to do was thaw and remove the tails before cooking. I threw them into a skillet and let them saute for about 5 minutes, then added the Thai Peanut sauce (about 1/3 of the bottle) and let simmer for about 10 minutes longer on low heat.

3. While the rice is cooking and the shrimp is simmering, chop up your veggies and saute them in a large skillet with some olive oil (or high heat coconut oil). You can add any variety of vegetables that you have or like. I had all the ingredients for skewers, so that’s what I used.

4. When all the ingredients are done cooking, remove from heat and serve hot. We piled the veggies on a cup of rice topped with shrimp and chopped peanuts. You can top with extra Thai Peanut sauce if desired. This was a unique and delicious twist to our traditional stir fry, we’ll definitely make it again!
